We took the tour of the brewery operations, daily tours offered at 3:15pm. The brewery is fairly new, operated by a local crew of very knowledgeable guys. The guy who led our tour actually worked in the operations, and told us about the relationship between this brewery and the original one in Salzburg. We got up close to each step of the brewing process, with all of the fine smells and the heat of the wort cooking kettles, got to watch the bottling operation, and a guy filling the kegs. They wash out each keg by hand when it comes back! We heard lots of answers to some fairly technical questions about yeast maintenance and types of yeast strains and viability, saw how the lab works for testing. At the end of the tour we sat at the nicely appointed bar for a casual chat and a full pint of the Trumer Pils, the only beer they make here, but really it is so good, it is the only beer they need to make here.
