linkThe former Monte Carlo Brew Pub is now known simply as The Pub at Monte Carlo. The layout is very much unchanged from it's brewpub days. There's still copper piping in the open industrial style ceiling. The most notable difference is the lit wall of beer names behind the bar as you enter. (and of course the dozens of taps) TV's are about as prominent as any place on the strip outside the sports books.
The beer menu is long, but is heavier on ambers and imports than stouts and IPAs. Really, that's getting nitpicky. There should be something on the menu of interest to just about anybody.
The food menu is full of just about every thing you'd expect to see on a pub menu. Burgers, sandwiches, wings, fish & chips, flat breads/pizza, pasta and salad are all there. The burgers, meatball sliders, and pizza my group ordered were all delicious.
The service here isn't what it should be, especially at this price point. We made two stops here; one at the bar, and one for lunch. The bar visit, there might have been as many bartenders as patrons, but that didn't mean you were going to be served in a timely manner. Lots of guys standing around. The lunch trip was a little better. Our waitress was friendly, but lets just say efficiency was lacking.
Places like this frustrate me. It's so close to being something great, but it's not. It's too expensive for the level of service they offer.

linkThis place was great...until they stopped brewing their own beer. They stopped this past year so I feel that it is a bit deceiving and rather disappointing to call it a brewery when they don't actually brew anything. They have decent pub fare and an above average beer selection for the hotel restaurant that it is. The best part is that they will serve any of their tap beers in a huge beer tower that they bring to your table. It is a great place to watch a game on one of the many TV's and they do have nightly live entertainment. The place is very large with a huge bar and many tables. It has an industrial look and the prices are reasonable considering it is in the middle of a hotel/casino in Las Vegas. Overall it is a decent place...as long as you're not looking to try their brews (which were good by the way).
